Founded on the home-style cooking and family recipes of Ana Maria Montoya Kishihara, Inka's signature flavors come from the northern province of Peru, where Ana and her family are from. The family brought their exotic recipes to California in the early 1980s and eventually started Inka Grill with perfect rotisserie chicken cooked over a smoldering wood fire as king.
